The Wonders of Pecans   by Jane Ros

Pecans are native to North America. Fossil remains show that pecan trees in the region of Texas and New Mexico spread from there to the north and east that is why the nuts are often associated with the South. Since 1500, Native Americans have been use up the nuts and added it as a seasoning. English settlers began planting pecan trees in 1700, and in the late 1770′s, including historical figures like George Washington and Thomas Jefferson had pecan trees in their gardens.

More than 1,000 classifications of pecans live, each with its own size, unique taste and thickness. Pecan trees are typically 70-100 feet high, but can reach up to 150 meters or more. Native trees are over 150 years old with trunks more than three meters wide diameter. Most pecan trees today, has been cultivated and widespread in the Southern United States. There are over 600,000 of these trees in Albany, Georgia alone, which is why Albany is called as the pecan capital of the United States.

Basically pecans are sold in their shells, but the development of machinery in 1920 they changed it. Nowadays, pecans plants have a number of machines that do everything from sorting and sterilization the size nuts, cracking, shelling and separating the two halves. Furthermore, there are other machines assign to remove the excess moisture. Larger plants can produce up to 150,000 nuts per day, or 30 million pounds in a year. No wonder that since 1948 more than 80% of the nuts on the market have been sold without shells.

There are many health benefits of eating pecans because they contain 19 essential vitamins and minerals. They are rich in antioxidants and study shows it help to prevent Alzheimer’s, cancer, heart disease, high cholesterol and Parkinson’s disease. Also, it can help increase metabolism and to have an effective body. One ounce of pecans (about 20 halves) contains nearly the same quantity of nutrients and proteins such as meat, fish, beans and seeds. These nuts supply 10% of the recommended daily value of fiber, which makes it the perfect ingredient for a vegetarian meal.

In addition to that, pecans are also rich in vitamin A, which protects the teeth, eyes, and bones as well as benefit the overall state of health. Given the recent interest in the nuts as a healthy food, sales of pecans and other nuts have increased. Pecan offers a delicious, healthy nut on the world market, a lucrative financial reward for those who decide to plant and market the product.
